In the vineyard of the Pinella region in Cocconato d’Asti with organic cultivation, PINOT NERO grapes are grown from which this Rosé Sparkling Wine is produced.
The maximum wine production per hectare is 50 hectoliters. After a selective manual harvest, with sorting of the PINOT NERO grapes at the right ripeness, follows the rosé vinification with soft pressing using only the "free-run" must.
The natural and spontaneous alcoholic fermentation is carefully controlled until the end of the first fermentation. This is followed by the "clarification" phase at a controlled temperature. After about 30 days, the second fermentation - or prise de mousse - follows in an autoclave, following the Martinotti (Charmat) method.
The subsequent six months in the autoclave, in contact with the yeasts, give the Pinella Rosé the delicate fragrance of Ribes and Pomegranate characteristic of Pinot Nero.
Deep ruby red color, vinous, full and satisfying aroma, with hints of fresh red fruit, just ripe with a delicate mineral trail, all extremely balanced.
Ancient native vine of Monferrato, Grignolino has a good freshness and medium tannicity that surprises, given the clarity of its characteristic ruby red color.
Intense ruby red color and remarkable structure. Vinous aroma, hints of red fruit, berries and a delicate spicy note. Soft on the palate.
Ruby red color; aromaticity played on floral and fruity notes of raspberry, rose and wild strawberry. On the palate the flavor is satisfying with a dry finish.
Intense ruby red color with garnet hints. Complex and full nose, with clear hints of red fruit, cherry and vanilla. Enveloping spicy nuances.
Straw yellow color with greenish reflections. Very delicate but intense and persistent aroma with fruity notes, white flowers and distinctly mineral hints.
Hints of acacia flowers, lemon, notes of sage and apricot. Warm on the palate, medium freshness and flavor, with a beautiful fruity finish.
Fermented in the bottle, a sparkling rosé Nebbiolo with sediment is obtained. "Capped" with a crown cap, it can be disgorged to consume it clear or shaken and uncapped to make it opalescent.
Its color is light copper with amber hues. Rich in aromas of thyme and herbs, and white fruit, pears, quinces and citrus fruits. It pairs well with Asian cuisine.
